Easy Crock Pot Recipes Perfect for Super Bowl Sunday



I love my crockpot... it is truly a best friend... reliable... helpful... it makes my life infinitely easier ... especially when entertaining.

So what better way to help prepare foods for a Super Bowl party than using a crockpot. Easy to prepare.. easy to serve and keep warm.

It allows you to spend minimal time in the kitchen... easy clean up ... and you get to enjoy the game as much as your guests!

There are so many options... here are 3 great menu options using a crockpot.  

Plan your other menu items around your main food that's made in a crockpot... now how easy is that?...

Chili.... Tostitos .... Cornbread......... another completely "prepare ahead meal".... for a beefier Chili... try Chuck Wagon Chili.... always a favorite!




Baked Ziti .... Meatballs.... Green Salad .... Fresh bread or Garlic Bread... a delicious meal you can prepare ahead.... make the Baked Ziti meatless for those who don't care for meat...and have a side of meatballs... problem solved!

Make these yummy Easy Cheesy Garlic Breadsticks with it...


How about BBQ Sandwiches?... BBQ Sandwiches.... Coleslaw.... Oven Fries... quick.. easy.. and delicious!

Super Bowl Party Menu Ideas


Here are a few ideas for your Super Bowl feast… I know the list is long… pick and choose what will work well for you depending on the size of your party and if you need to cover for picky eaters.



I chose Chili because you can throw it into a crock pot and forget about it… it can stay hot in the pot as well… so it’s an easy serving idea…. I serve Chili with toppings for guests to choose from…shredded cheese, chopped green onion, chopped tomatoes, Guacamole, sour cream and chips…. So I also chose mini tacos… they get the same toppings… as well as, shredded lettuce and salsa…. You can make the taco meat ahead of time… so there’s virtually no work on Game Day.


I know I said keep to a theme… so Bavarian Cheese Fondue may seem out of place… but it’s really not… It’s a cheese fondue made with a dark beer… make large soft pretzels and cut them up as dippers… the guys will love them…. you can buy frozen pretzels in the freezer section at the grocery store… pop them in the oven …. Let them cool… and cut them up… also the cheese fondue is really quick… stays hot on its own… so it's really an easy party food.

Snacks and dips work well with everything…. I added popcorn as an alternative to chips. I included a veggie platter… I wouldn’t go nuts… just a few kinds of veggies… something for those watching their diet to snack on… add a Southwest Ranch Dip… make your own or buy it… either way it will work well. Salsa will go well with these too.


Buffalo Style Beef Empanadas with blue cheese or ranch dressing fits right in and they’re easy to make….







Potato Skins also fit right in to that “Happy Hour” feel.









Smoked Turkey Quesadillas and Chicken Dippers with sauces are just an alternative to the Chili for those not crazy about Chili…. The quesadillas are easy… use taco size tortillas... cut them into wedges.. the taco and chili toppings go well with them too… so put them next to them. The Chicken Dippers…. I would buy frozen nuggets… and put out honey, barbeque sauce and a mustard sauce…. again …little prep and not expensive.


I listed Corn and Green Chili Rice because it goes so well with Tacos and Quesadillas… depending on what you choose for main dishes… you can consider this… and it can be made ahead… it actually is better the second day.



With a spread like this… I keep sweets simple… you have to include them… but keep it simple… I found this fantastic recipe for easy Margarita Ole Bars…. and Brownies are always a hit.

Football is Here and So is Great Food!!!


Well Fall is here… and with that…. FOOTBALL!! Are you having a kick-off party?.... Here are some great last minute ideas for those munchies… after all.. you can’t have a football party without something to nibble on!









Lil Smokies in a Blanket








Nachos... instead of making them in a pile... use a large baking pan.... for example a 17x9.... and separate the chips more.. so it's easy for your guests to take a portion.







Mexican Layered Dip








Stromboli… yummm…. Stuff it full of Italian meats and cheeses… throw in some sliced olives… maybe some roasted red peppers… be creative!






Pizza … make up a batch or two of pizza dough…. have lots of different toppings… Not having a big crowd but still want some variety?... make half and half pizzas… half one combination of toppings and the other half different kinds….




Mini Ham and Swiss Party Sandwiches…. I just posted this today… they’re quick and easy and can be made completely ahead… and won’t break the bank… don’t like Ham and Swiss? … make any combinations of meats and cheeses you want…. salami and provolone… turkey and pepper jack cheese….you can even make tuna melts… just make the tuna salad and use whatever cheese you want … be creative!

Now for some great "Go-Togethers"!... They're easy and cheap to make... great menu stretchers!

Tips for Planning an Easter Brunch for a Crowd


Celebrating Easter brunch can be very special and loads of fun… personally for me, breakfast foods and even some main “lunch” type meals are among my favorite foods. I always try to keep it simple with as many do-ahead food items as possible… I’m a firm believer in not slaving in the kitchen while family and friends are enjoying the party.

Deciding on the Menu

Now is the time to start thinking about a menu. Things to think about:

The first consideration is just how big the party will be. The bigger the guest list… the more you need to concentrate on buffet type items and not individually cooked food items. More on this topic in a moment.

Another consideration is timing… is everyone arriving at the same time…. or will guest be wandering in over a time period… like an open house.

How many ovens and their size do you have…. How many things can you bake at once or keep hot in them.

Do you have the necessary equipment to keep hot foods hot… and cold ones cold.

Dietary restrictions and food preferences of the guests. Let’s face it… as nice as some gourmet foods are… if Uncle Charlie and Aunt Mabel and their brood …. don’t like odd food ingredients.. don’t bother killing yourself making things they won’t touch… maybe include an item or two that’s different that they may try… but nothing is worse than working hard … then having guests leave hungry and leaving you with tons of expensive leftovers.

Just another note on that topic… nothing drives me crazier than all those food sites, mostly the professional ones, that concentrate on foods that have exotic, expensive and hard-to-get ingredients that most people can’t even pronounce …let alone know what they are … and unusual flavor combinations… sure I like to throw something different on a menu … but it’s one item… maybe two… not the whole darn menu. I think it reeks from the “I’m so special and you’re not syndrome”. I truly dislike pretentious food… I like to serve favorites that people will really enjoy….. (I’m stepping off my soap box now).

Many restaurant buffets offer a variety of food types after all … it is brunch… and that will include lunch… a salad… maybe some fruit…and an entrée or two is very appropriate for a larger crowd. In fact… if you have a favorite place to go for brunch… take your cues from their assortment…

If you serve something like a stroganoff with noodles or rice… and want to serve another alternative… try to pick something that will go well with the noodles or rice… perhaps a seafood alternative…

I always serve desserts… we all have a sweet tooth… and well… a holiday celebration isn’t a celebration without sweets… I like to make these small… have a variety… and make them look special.. miniature pastries, miniature cheese cakes and cupcakes… are among my favorites.

Don’t forget beverages….juices… cold soft drinks… possibly include alcoholic ones…and of course, tea and coffee. Mimosas and Bloody Marys are terrific… or find another fruity drink… try to pick something that you can put in a pitcher and let guests serve themselves… If serving alcoholic beverages… make a “virgin” alternative so those driving or those not wanting alcohol can enjoy the special drinks.

What not to serve:

Recently I was watching an older episode of the Barefoot Contessa … in the episode she was recounting some of her party “disasters”… one of which was a party where she made omelets… for something like 15 people… a total disaster… they took too long to make… so people were waiting for theirs while others were eating… she was running around like crazy… it was a “never-again” moment for her.

I had to chuckle to myself… we all have those “never-again” moments… I certainly did… a number of times with different food items… I, too, made the omelet mistake. As I was running around like a chicken without my head… I had one of those …DUH moments… all I could do was laugh.

So unless you have a chef at your party … maybe two of them… leave omelets off the menu. A perfect alternative to omelets would be frittatas … they bake while you do other things…

Poached eggs are another one I would probably stay away from…. although… it depends on the size of your crowd…

I have an egg poacher that does 6 eggs at a time… which is probably the max amount you can make if you’re making them in boiling water …. they only cook for 2-3 minutes, depending on how runny you like the egg white and yolk… so it is still a possiblility.. the decision to serve them will depend on how many other last minute things you need to do.

I once went to a restaurant brunch.. a fairly upscale restaurant… they included poached eggs on the buffet…. they were “lined-up” in a large buffet pan that was heated… admittedly the yolks were almost hard… but some people like them like that… I personally don’t… I like a runny yolk.

Getting started:

Make lists!

So pour yourself a cup of coffee… grab a pad and pen… and go idea hunting… peruse the archives here and elsewhere… see something you like... write it down… list where you saw it… and when you’re done…

Group the items by type… breakfast item… lunch item… dessert and beverage. Then look over the list and mark the ones that can totally be made ahead… those that need to bake… those that require the stove-top … the microwave… etc.

Start picking items that will fit into your budget… consider dietary restrictions and preferences… what items will go well together… eggs, meat, potatoes, casserole types, pancakes, bread or pastry types, desserts etc… and your menu will make itself!

I looked at the calendar a few days ago and was shocked to realize Easter is just around the corner…. it’s a week earlier this year than last year. … and I haven’t even started thinking about any menu or started any planning… I’m sure I’m not the only one in that boat.

So why am I telling you all this?… just go and listen to the video… just listening to it reminds me of going through MGM at Disney or Universal Studios in Orlando… you get caught up in the excitement and fantasy… all of a sudden you’re a kid again… and fantasy is what’s all about… remember when you thought … hey I want to do that….come on… admit it… even for one second… every kid loves to play pretend…

Trucking through all the rides and shows and attractions… brings you back to all those favorite movies..… seeing old classics… a bit of history… you go back in time when Hollywood glitz was …well… glitzy!.... and loads of fun!
