Recipe: Breakfast Burrito
This is simply delicious…. you can also make it with cubed ham (make the cubes really small)…see the variation of the recipe at the bottom.
You can also assemble the burritos ahead of time and flash freeze them by placing them on a non-stick pan and putting them in the freezer until they are frozen… then placing them in an air tight container… take out what you need and keep the rest in the freezer. To reheat… place on a plate or paper towel and microwave for 30 seconds, flip it over and microwave for another 30 seconds.
The recipe calls for sliced American cheese… I like to use shredded Cheddar or Monterey Jack… I just eyeball the amount to be roughly equivalent to 1 slice of American cheese.
This recipe makes a lot of burritos… perfect for a large family or a small family for multiple breakfasts…. Either way… your family will love them.
Breakfast Burrito Recipe
All you need:
12 eggs, beaten
12 (8 inch) flour tortillas
½ cup finely chopped green onion
12 oz. pork breakfast sausage
1 ½ tablespoons minced green chilis (canned)
Salt
Pepper
12 slices American cheese
3 Plum (Roma) tomatoes, chopped
All you need to do:
Preheat a large skillet over medium heat.
Crumble the sausage into the pan.
Cook the sausage for 2 to 3 minutes or until the sausage is browned.
Add the green onion and cook for 1 minute longer.
Add the green chilis and continue to cook for 1 minute.
Pour the beaten eggs into the pan and scramble the eggs with the sausage mixture.
Add salt and pepper to taste.
To heat up the tortillas, place them in the microwave between moist paper towels and microwave for 20 to 30 seconds.
Split the slice of American cheese down the middle and place them end to end in the middle of the warmed tortilla.
Scoop a large serving spoon size of the egg mixture onto the cheese on the tortilla.
Sprinkle with about a tablespoon of chopped tomatoes.
Fold one side of the tortilla over the filling.
Then fold up about 2 inches of one end.
Fold over the other side of the tortilla to finish making the burrito… one side will be open.
Serve hot with salsa. (We also like a dollop of sour cream)
Variation:
Instead of sausage use small cubes of cooked ham. Put 2 tablespoons of margarine in the skillet and sauté the ham, onions and green chilis as directed above.
