Easy Potato Latkes

I posted my original recipe for Potato Latkes years ago.  It was the traditional recipe, par-boiling the potatoes etc.  It did mention a tip using frozen hash browns or refrigerated shredded potatoes as a quick substitute for whole potatoes. 

Fast forward to last night, a busy day turned into a busy night and I wanted to get supper on the table quicker but didn't want to change what I originally planned on serving...so a shortcut was in order.

As I was cooking them.. I thought to myself... this is more than "just a tip" it's a life saver for someone that's busy but still wants to make a nice meal. I made a mental note to post the recipe again using refrigerated shredded potatoes.

Before going further... so what exactly are Potato Latkes?

Potato latkes are another traditionally Jewish food that is absolutely delicious. These little potato pancakes are terrific served with applesauce or sour cream. You can make them small for appetizers or a little bigger for a side dish of a meal… either way… they are yummy!

TIPS

The recipe calls for shredded potatoes… in the years since my original post I have started regularly buying "Simply Potatoes" shredded and partially cooked potatoes in the bag in the dairy section of the supermarket.

I sometimes throw a bag in the freezer so I always have them on hand.... whether using them out of the fridge or after defrosting them from the freezer..definitely lay them out on paper towel to soak up some of the excess moisture, but don't go crazy trying them out... they will be fine if a little wet.

If they are a little too wet, I simply sprinkle an additional tablespoon or so of flour on them and toss them to coat.

I did alter the recipe a little... I like to sauté my onion in 2 tablespoons of butter and then cool them before adding them into the potatoes.  It makes the onion flavor a little more subtle.

I also added about 2 tablespoons of chopped parsley... it's optional, but we like it.

Depending on your pan, will depend how much oil you really need.  I use a non-stick pan and only use what I need, which in my opinion is less than 1/2 cup.  I also like to use some butter for flavor.  I start out with about 2 tablespoons of each and as I cook them add more as needed.

And finally, I altered the quantity  of flour from the original recipe to adjust for the use of an entire bag of "Simply Potatoes" shredded potatoes and taking into account they are somewhat wetter than when whole potatoes are used.

Serve with applesauce and/or sour cream.

Recipe:  Easy Potato Latkes

All you need:

1 bag Simply Potatoes Hash Brown Potatoes
1 small onion, grated or finely chopped
2 tablespoons butter
2 eggs, beaten
1/4 cup tablespoons flour
2 tablespoons finely chopped parsley (optional)
1 teaspoon salt
About ½ cup oil *See TIPS

All you need to do:

In a medium bowl toss the shredded potatoes with the flour until coated evenly.

Place the butter in a small skillet and melt it over medium low heat.  Add the onion and sauté until the onions are soft.  Do not allow them to brown.  Remove the skillet from the heat and allow to cool.

Add the onion, eggs, chopped parsley (if adding) and salt. Stir to completely combine.

In a large heavy skillet, heat enough oil to cover the bottom of the pan over medium high heat until hot.  Add oil as needed.

Drop large spoonfuls of the potato mixture into the hot oil.

Press down on them to flatten into ¼ to ½ inch patties.

Brown on one side, then turn and brown the other side.

Remove and place on paper towels to drain.

Serve hot with applesauce and/or sour cream.



Zucchini Pancakes




These Zucchini Pancakes are so much like Potato Latkes (Pancakes)… I bet if you closed your eyes you wouldn’t be able to tell the difference.

If you’re not familiar with Latkes… they are wonderful Jewish Potato Pancakes made of shredded potato. These Zucchini Pancakes are made of shredded zucchini… and very simple ingredients.. flour, finely chopped onion, egg or egg substitute (more on that in a minute), a little salt and pepper… that’s it!

Their quick and easy to make.. and positively addicting!

TIPS

I mentioned earlier that you can use egg substitute… and you can.. 1 large egg equals about ¼ cup of egg substitute like Egg Beaters… check your carton for the substitution. This recipe uses 2 eggs or ½ cup of egg substitute.

This can be a truly lowfat pancake, use butter flavored cooking oil spray… but I must admit… the mixture of olive oil and butter is really, really good…

The amount of flour is approximate.. zucchini can be quite wet… I drain mine in a colander for about an hour or so… and squeeze out any excess… add the amount of flour listed… then the egg, mix well.. if it is runny then add more flour.. you want a very sticky consistency not runny.

Make these small or large… small ones make great little hors’dourves or medium size as a side or appetizers and larger ones for... well… larger sides…

This recipe will make approximately 15 medium pancakes.

Serve with sour cream and chopped chives.

Try these.. you will be amazed at how yummy they are!








Recipe: Zucchini Pancakes

All you need:

3 cups shredded zucchini (peeled then shredded)
1 medium onion, finely chopped
½ - ¾ cup flour *See TIPS
2 eggs or ½ cup egg substitute
Sprinkling of salt and pepper
2 tablespoons butter
2 tablespoons olive oil
Sour cream for garnish
Chives for garnish

All you need to do:

In a large bowl, mix the zucchini and onion until the onion is distributed evenly.
Add the ½ cup of flour and mix until evenly coated.

Sprinkle with salt and pepper.

Add the egg and mix well.

Add additional flour is batter is too runny. You want a thick sticky consistency.
In a large skillet over medium high heat, melt the butter with the olive oil.

Drop the mixture by spoonful and flatten slightly. Cook until the bottom is lightly browned. Flip over and cook until the other side is lightly brown and pancake is cooked through.

Drain on paper towels.

Serve with sour cream and chives.

Baked Italian Cheesy Tomatoes


This quick and easy recipe for Cheesy Baked Tomatoes is low carb friendly... and totally delicious.  I made it as a side for supper.
Tastes like a garlic bread.. without the bread... and the tomatoes are wonderful this time of year... deep red ripened tomatoes with that wonderful flavor.. just YUMMMM!
TIPS
If you want to lower the fat... you can use a fat free Italian dressing.... but really there is very little used.. so it shouldn't be an issue.
If you don't have Italian dressing.. you can just brush some olive oil on them... they just won't have as strong "Italian" flavor.
I used a finely shredded Italian cheese mix.. but you can use just mozzarella if that's all you have... sprinkle a little Parmesan cheese too...
Cut your tomato slices thick...
You can also just cut the tomatoes in half.

Recipe:  Cheesy Italian Baked Tomatoes
All you need:
Tomatoes, thickly sliced
Shredded Italian blend cheese
Zesty Italian dressing (not creamy)
Italian seasoning
Garlic powder
All you need to do:
Pre-heat the oven to 450 degrees F.
Lay the sliced tomatoes on a foil lined baking sheet (I use non-stick foil).
Brush the tomatoes with the Italian dressing, sprinkle with shredded cheese, then sprinkle with Italian seasoning and garlic powder.  Bake until cheese is melted and starts to brown.
Serve immediately.

Chorizo Black Beans and Rice


We love Mexican chorizo and are always looking for ways to incorporate it into our recipes.... so on a quiet Saturday.... out came the skillet and the chorizo ... and a quick look into the pantry... and a new recipe was born... a delicious one at that.
This makes a terrific side dish... or even a meal in itself...
TIPS
You will probably need to drain off some of the fat that renders when cooking the chorizo... depending on how fatty your chorizo is.... just don't drain it all off... you will need some for the onions and garlic.
You can usually find chorizo in the supermarket... Mexican chorizo comes in plastic casings... looks like orangey hot dogs... just snip the end and squeeze out the chorizo into your skillet.
I seasoned the dish with my Fajita seasoning... make your own... don't bother with the commercial stuff... it's easy and you know exactly what's in it... click here for the recipe.
I used plain diced tomatoes.. but if you want to add some kick... use a can of Rotel Tomatoes.
This was super easy to make.. I hope you try it!







Recipe:  Chorizo Black Beans and Rice
All you need:
4 links of chorizo
1 medium onion, chopped
2 gloves garlic, finely chopped
1 can Hunts Diced Tomatoes
1 cup uncooked Minute Rice
1 cup chicken broth
1 can black beans, drained and rinsed
1 tablespoon Fajita seasoning
All you need to do:
Remove the chorizo from the casing and cook in a large skillet, over medium high heat until cooked through.  Drain off all but about a tablespoon of grease or if you prefer.. drain it completely off and add 1 tablespoon olive oil to the skillet. 
Add the onions and cook for about 2 minutes... then add the garlic and cook until onions are soft... do not brown... lower the heat if necessary and stir frequently.
Add the rice and mix well... cooking for a few minutes.  Add the canned tomatoes, chicken broth, black beans and Fajita seasoning.  Stir well... place the lid on the skillet and cook for about 8 minutes until the rice is cooked... stirring occasionally.
Serve immediately.
