Mock Loaded Mashed Potatoes


Delicious and low carb!  ....  they're loaded alright... with butter, cheese and bacon.... who would have thought cauliflower would taste so good?!
TIPS
For carb counters... the ingredients are fine.. but for fat watchers... you can make a few substitutions to  lower the fat.... use low fat margarine... reduced fat cream cheese... fat free half and half... lower fat cheese and turkey bacon...
I used a bag of frozen cauliflower.. a store brand... and made it in my microwave until very soft.. about 7 minutes on high.... you can use fresh or frozen.. just make sure you cook it soft and mash it while it's hot.

Cook the bacon until it's cooked but still a little pliable.. then chop it fine.... I use my mini chopper...
You can use any cheese you prefer... cheddar, Monterey jack.. Mexican blend .. all work well...
I use an immersion blender.. you can use a food processor to process or mash your cauliflower... the ingredient amounts are suggestions.. use them to your discretion... if you like it very cheesy.. by all means add more cheese... likewise with the bacon.

Recipe:  Mock Loaded Mashed Potatoes
All you need:
1 bag (16 oz.) frozen cauliflower
3 tablespoons butter
About 2-3 oz. cream cheese (eyeball it from a package), softened
4 strips of bacon, cooked, drained and chopped
3/4 cup shredded sharp cheddar cheese
1/4 cup shredded Parmesan cheese
2-3 tablespoons fat free half and half or heavy cream
Salt and pepper to taste
All you have to do:
Cook the cauliflower until very soft, drain off any excess liquid.  Place the cooked cauliflower in a deep bowl or food processor... using an immersion blender or the food processor.. blend until mashed well.
Add remaining ingredients and mix well... blend more until it's the consistency you like.
Serve immediately.
