Chicken Cordon Bleu Meatballs


This recipe for Chicken Cordon Bleu Meatballs came to be as I was trying to come up with a different meal using chicken.  It's quick and easy with all the taste and low fat... for you low carb eaters.. it's not too bad either.... just a little bit of crumbs on the outside for some crunch.
TIPS
I used smoked ham from the deli.... you can use any ham you prefer... but I recommend the smoked ham it adds a lot of flavor.
Just rough chop the ham and put it in your mini chopper and pulse a few times for perfectly chopped ham for this.
You can find shredded Swiss cheese in the grocery store... I personally like Sargento's Artisan Blend that mixes Swiss and Gruyere cheeses... but if you can't find it.. shredded Swiss alone is fine too.
No "filler" like bread crumbs is necessary... the cheese and ham will hold everything together nicely.
When you bite into these it will look pink.. don't panic that the ground chicken isn't cooked... it will be pink from the ham you mixed in.

Serve this with just about anything... veggies... rice... noodles... potatoes.. it's all good.






Recipe:  Chicken Cordon Bleu Meatballs
All you need:
1 pound ground chicken
1 cup shredded Swiss cheese
1/4 pound deli smoked ham, finely chopped
3 tablespoons chopped fresh parsley
1/2 cup seasoned flour (seasoned with garlic powder, onion powder, salt and pepper)
2 eggs, beaten or egg substitute
Seasoned bread crumbs
Butter flavor cooking oil spray
All you need to do:
Preheat the oven to 350 degrees F.
Line a baking sheet with non-stick foil and generously spray the foil with the cooling oil spray.
In a large bowl, combine the ground chicken, smoked ham, shredded Swiss cheese and parsley.  Mix well.  Form the meatballs.
Set up 3 flat bowls... one for the seasoned flour, one for the eggs or egg substitute, and one for the bread crumbs. 
Role the meatballs in the seasoned flour, then the egg, then the crumbs.  Place on the prepared baking sheet.  Spray the meatballs generously with the cooking oil spray.  Bake for 30 minutes at 350 degrees F.
Place on a serving plate and drizzle gravy over the top.  Serve gravy on the side.
