
This quick and easy side dish is a nice alternative to the boxed or packets of rice. What I like about it is that I can control the sodium and other added ingredients.
TIPS
I found mixing the carrots and peas with the rice very bland…. so I added other ingredients… you can do the same… add what your family likes… it’s a great way to get them to eat their veggies.
If you don’t have or don’t want to use a bouillon cube, substitute chicken broth for the water when making the rice.

Recipe: Rice Medley
All you need:
2 cups Minute Rice, uncooked
2 cups frozen carrots and peas, cooked
3 tablespoons butter or margarine
1 chicken bouillon cube (optional)
All you need to do:
In a medium size microwaveable dish, crush the bouillon cube (if using). Add the rice and 2 cups water and microwave according to the package instructions.
Add the butter and cooked peas and carrots, mix well.
Season with salt and white pepper to taste.

I used one of those steamer vegetables that had sugar peas brocolli and bell peppers with a cheese sauce and put it in my rice my husband who is not a big rice fan but will eat it said it was the best rice he has eaten
