Recipe: Huevos Rancheros


This popular traditional Mexican breakfast is easy to make… especially using a store bought fresh salsa. A wonderful and easy breakfast to make in no time at all… of course there are many recipes.. and very good recipes at that.. making the ranchero sauce from scratch… and I may post one like that at another time… today’s post is all about quick and easy…

This breakfast is often accompanied by refried beans …

TIPS

I have to emphasize ..fresh… salsa…. definitely not the bottled kind … if you aren’t going to make the salsa from scratch.. get the kind you can find in the produce section of the grocery store.

Traditionally … most recipes call for corn tortillas.. although wheat tortillas can also be used… which is what I did… we prefer the wheat tortillas over the corn ones.

The fresh salsas are refrigerated.. so definitely put what you are going to use in a microwaveable dish and microwave it for 15 seconds … just to take the chill off it.

You can use any cheese you like… for Warren’s eggs I used pepper jack cheese… for mine .. I used a Mexican mix.

Make sure to use a skillet that has a lid on it.. after cooking the eggs for a minute or so.. you will be sprinkling or laying a slice of cheese on top of the egg… then putting a lid on the skillet to help melt the cheese as the eggs finish cooking.

This is delicious served with guacamole.

Recipe: Huevos Rancheros

All you need:

Tortillas
Olive oil cooking oil spray
Fresh salsa (see Tips)
Cheese, shredded or sliced
Eggs

All you need to do:

Preheat the oven to 250 degrees.

Spray cooking oil spray on a medium skillet. Heat the skillet over medium high heat.
Place a tortilla in the skillet to ‘fry” it for about a minute a side… until it’s warm and a bit browned.

Place on an oven proof plate and keep warm in the warm oven.

Repeat with all the tortillas needed (one per person).

Spray the skillet again, now break two eggs into the skillet and cook for about 1 minute. Then sprinkle with cheese and cover… cook until eggs are at desired doneness and cheese has melted.

Place a warmed tortilla on a plate, spoon salsa on the tortilla and place the cooked eggs next to it and overlapping the salsa a bit.

Repeat for each serving.
