Recipe: BBQ Chicken Cheddar and Bacon Stromboli


Easy Easy Easy….. and tasty tasty tasy… what could be better? This recipe for a BBQ Cheddar and Bacon Stromboli can be prepped in advance and with a refrigerated pizza dough put together in minutes… you can have supper on the table in under a half an hour.

This is also a perfect food for watching the game.

TIPS

I used 2 boneless chicken breasts that I cooked the day before.. you can either bake then cook them in a some chicken broth, which is how I make them.. I like it because they stay nice and moist that way.

You can also purchase roasted chicken in the grocery store if you want to take an even bigger shortcut.

You can make the bacon in the oven and line your pan with foil so clean up is a snap. I also make the bacon the day before and store it in a zip loc until I need it.

Use whatever BBQ sauce is your favorite… homemade or store bought.

Use as much or as little BBQ sauce as you like.. mix it well until it’s coated however you prefer.

Dice the chicken very small, almost shred it.

Use both the green and white parts of the green onions.

This is delicious with oven fries or a side salad like macaroni or potato salad. I served it with fresh green grapes and macaroni salad.






Recipe: BBQ Chicken Cheddar & Bacon Stromboli

All you need:

2 boneless skinless chicken breasts, cooked and diced
1 ½ - 2 cups BBQ sauce
4 slices smoked bacon, cooked, drained and chopped
1 ½ cups finely shredded Cheddar cheese
½ cup chopped green onions
1 can Pillsbury Pizza dough (not thin crust)
Olive oil cooking oil spray

All you need to do:

Preheat the oven to 425 degrees F.

Line a baking pan with non-stick foil. Lightly spray the foil with the cooking oil spray and set aside.

In a medium bowl mix the diced chicken and BBQ sauce.

Take the pizza dough out of the can and unroll it on your prepared baking sheet.

Press the dough into a rectangle… do not make the dough too thin.

Put the BBQ chicken down the center of the dough from one sort end to the other.

Sprinkle the chopped bacon over the chicken, then sprinkle the cheddar cheese, then sprinkle the chopped green onion over the top.

Carefully pull the sides of the dough from the long side to the middle. Pinch the dough closed.

Lightly spray the Stromboli with the olive oil cooking oil spray.

Bake for 16 minutes or until light golden brown.

Allow to cool for about 5 minutes before cutting.

Cut the Stromboli in slices.
