
This recipe for BBQ Chicken is a copy cat of sorts of an Applebee’s entrée. I recently had their version of this dish and liked it, but.. I felt it was far too greasy and thought I could do better… I think I did.
This recipe is quick and easy… a perfect weeknight meal.. serve it with mashed potatoes and coleslaw … they serve it with corn cakes which was a nice touch too.
TIPS
Use whatever BBQ sauce you prefer… commercially made or homemade.
The Applebee’s version uses cheddar… not everyone likes cheddar… you can use Monterey Jack instead.
I made the bacon in the oven… I just took it out of the oven about 5 minutes before it was done… it will finish cooking when you put it on the chicken ….. see my previous post for instructions on “Making Bacon in the Oven”.

Recipe: Oven Baked BBQ Chicken with Bacon and Cheese
All you need:
BBQ Sauce
Boneless skinless chicken breasts
Thick sliced bacon (1 slice per chicken breast)
Shredded Cheddar or Monterey Jack cheese
All you need to do:
Make the bacon in the oven and remove about 5 minutes before it is done (it will be cooked but chewy). Set aside.
Allow oven to cool to 375 degrees F or if you made the bacon ahead, then preheat the oven to 375 degrees F.
Pour about some BBQ sauce in a flat bowl.
Drag the chicken through the sauce, coating both sides.
Place the chicken in a baking dish.
Bake for 20 minutes.
Remove the dish from the oven and lay 1 piece of partially cooked bacon on each chicken breast.
Spoon a small additional amount of BBQ sauce over the bacon and chicken.
Place about 3 tablespoons of shredded cheese on top of each breast.
Return to the oven and continue baking for about 8-10 minutes.
Make sure the cheese has melted before removing from the oven.
