Recipe: Garlic Bread


There are lots of ways to make Garlic Bread… just a quick look even around the net will prove that statement to be true… then hit the cookbooks… and you’ll find even more versions… and to tell you the truth… I probably make it at least half a dozen ways… it just depends on the meal…. sometimes I like it really pungent and garlicy… sometimes I want a more subtle flavor… and sometimes I want it with other herbs and other times still I want it with cheese….sometimes I use butter …sometimes olive oil… sometimes a combination…. I use a variety of breads… depending on what I have on hand or what I’m in the mood for… so with that said… you will probably find more versions of Garlic Bread posted here as time goes on… try them… you may like more than one.

Today’s Garlic Bread recipe uses Italian Bread… sliced on the thin side… I used only softened butter… seasoned with parsley…garlic… a dried oregano… I sprinkled a little mozzarella on top for variety.. this bread was garlicy but not pungent… I didn’t want it to overpower the meal.

TIPS

I measured the parsley leaves loosely in a measuring cup before I chopped it… I didn’t want parsley paste…

The butter was soft but not runny.

I used my beloved mini chopper to chop the parsley and garlic cloves together… then I dropped in the butter (it was cut into chunks for easier processing) and dried oregano and salt and pepper… just a few pulses and it was done… it was extremely soft when it was done… easier to spread it on the bread.

I slathered the butter mixture on heavily… you want it to melt through the bread to the bottom.

I placed them on a foil lined baking sheet… then covered it with foil… so the butter will melt through .. then removed the foil so the tops of the bread would brown a bit.

I sprinkled the cheese on the tops after the foil was removed.

Add as much or as little cheese as you like… sometimes gobs of cheese on garlic bread is so good… this time I only put a little… again I didn’t want it to overpower the dish it accompanied.

Recipe: Garlic Bread

All you need:

1 loaf Italian Bread, sliced
1 stick of butter, softened
¼ cup parsley leaves
3 medium size garlic cloves
¼ teaspoon salt
3-4 turns on the pepper mill
1 teaspoon dried oregano
½ cup shredded mozzarella cheese

All you need to do:

Preheat the oven to 400 degrees F.




Place parsley leaves and garlic cloves in the mini chopper. Pulse until all is finely chopped.







Add softened butter (cut into chunks), dried oregano, salt and pepper. Pulse several times until well incorporated.




Generously spread the seasoned butter on the Italian bread slices.

Place on a foil lined baking sheet (for easy clean-up).

Cover with foil.

Sprinkle slices with shredded mozzarella.

Place bread in the oven for 5 minutes.

Remove foil and continue to bake for another 5 minutes or until bread is lightly toasted and cheese has melted.

ok this dip is on my list for this weekend, however since i'm gluten free I will have to use an alternate to spread it on...maybe pumpernickel? hhmmmm
