Crock Pot Taco Soup



This Taco Soup is a wonderful soup.. chock full of flavor.. loaded with healthy fiber…and so easy to make…  about 10 minutes of prep.. and let the crock pot cook dinner for you!
You can also make this on top of the stove, just follow the instructions except instead of slow cooking in a crock pot, simmer on top of the stove at least an hour.
TIPS
I love black beans.. and I think they add a nice variation in flavor and color to this soup.. but you can use red kidney beans if you prefer.
I wrote this recipe listing Taco Seasoning… I highly recommend you use my homemade Taco Seasoning… it has great flavor and you control the ingredients.. no artificial fillers.  Click here for my for my recipe.  Use 3 heaping teaspoons of the seasoning mix.  You will have leftover.. save it and use it to make Tacos. 
If you want to use a prepared Taco mix… use the whole packet.
I know the powdered Ranch dressing is an odd addition.. but it really is a great addition.. the spices add to the overall flavors of this.
I used Rotel tomatoes… they come mild or hot.. use whichever you prefer… I use the mild version.
This will make about 6 servings.

Recipe:  Crock Pot Taco Soup
All you need:
1 pound very lean ground beef
1 large onion, diced
2 large garlic cloves, minced
1 can (15,25 oz.) corn, drained
1 can (15 oz.) black beans, drained and rinsed
2 cans (10 oz. each) Rotel diced tomatoes and green chilies
1 can (14.5 oz.) Hunts Diced Fire Roasted Tomatoes with Garlic
1 small can (4.5 oz.) Green Chilies
1 small can (2.25 oz.) black olives
1 can (10 ¾ oz.) Campbell’s Condensed Tomato soup
1 cup water
Taco Seasoning *See TIPS for quantity
1 packet dry Ranch Dressing
Garnishes:
Shredded Cheddar cheese
Chopped green onions
Sour Cream
Additional black olives
Corn Chips (optional)
All you have to do:
Brown the ground beef in a skillet over medium high heat.  When the meat is almost cooked, add the onions and garlic.  Cook until the meat is cooked and the onions are soft.  Drain off any excess fat.  (You may not have much if you use very lean meat).
Add the mixture to the crock pot.  Add the remaining ingredients (except the garnishes) to the crock pot.  Stir to mix.  Cook on high 4-5 hours or on low for 7-8 hours.
Serve in bowls with garnishes.
