Warmer weather is here… so fire up the grill and make
salads! Not all salads have to have
macaroni or potatoes… some can be light and healthy… like this Cucumber, Tomato
and Red Onion Salad.
TIPS
For quantities of the vegetables…. add as much or as little
as you want to this salad. My
quantities are suggestions.
For the tomatoes.. you can use any small to medium sized
tomatoes…plum tomatoes, cherry tomatoes or compare tomatoes all work well.
To make the pretty cucumber slices… run a fork down the
cucumber (all sides) after peeling but before slicing.
The dressing is the standard vinegar and water one…. For all
you New York deli lovers.. yes this is the same dressing they use on cucumber
and onion salad.
I hope you try this delicious salad.. it goes with just
about any grilled meat.
Recipe: Cucumber, Tomato and Red Onion Salad
All you need:
3 good sized cucumbers, peeled and thinly sliced
About ¼ of a large red onion, thinly sliced
About 6 small to medium sized tomatoes, cut into wedges
2/3 cup water
2/3 cup white vinegar
4 tablespoons sugar
Generous sprinkling of salt and pepper
All you have to do:
Put the cucumber slices, tomatoes wedges and sliced onion in
a large bowl. Toss gently to mix.
In a small bowl, combine the water, vinegar, sugar, salt and
pepper. Pour over the vegetables. Be sure to use a rubber spatula to get all
the sugar out of the bowl, it will eventually dissolve into the liquids.
Stir the salad and cover with plastic wrap. Refrigerate at least one hour before serving.
