Recipe: Sweet Potato Soup

This soup recipe is from my Mother and is similar to the potato soup recipe except that it calls for sweet potatoes. It is also delicious and the sweet potatoes give it a different twist.

Sweet Potato Soup Recipe:

All you need:

1 stick of butter
½ cup chopped onions
1 cup celery, diced
2 large sweet potatoes, peeled and cubed
3 cups of fat free chicken broth
1 cup milk
1/8 teaspoon nutmeg
1 tablespoon brown sugar
1/8 teaspoon cinnamon
Salt to taste
Pepper to taste

All you have to do:

Melt the butter in a large pot over medium heat.

Add the onions and celery.

Saute until onions are soft.

Add the sweet potatoes and the chicken broth.

Bring to a boil.

Lower the heat and simmer, covered for about 25 minutes until potatoes are soft.

Remove the pot from the heat.

Scoop out the vegetables and a little of the liquid and put into a food processor or blender.

Puree until smooth.

You may have to do this in batches.

Return the pureed vegetables to the pot and stir.

Stir in the milk, brown sugar, cinnamon and nutmeg. Heat until brown sugar has melted, stirring constantly.

Season with salt and pepper to taste.
