This pumpkin soup recipe is popular in the fall… but it really is good anytime of the year!

Pumpkin Soup Recipe
All you need:
2 tablespoons butter
1 large onion, chopped
2 shallots, chopped
2 medium potatoes, peeled and cubed
6 cups cubed pumpkin
8 cups of fat free chicken broth
½ teaspoon cumin
Dash of nutmeg
Salt to taste
Fresh ground black pepper to taste
Snipped fresh chives for garnish
All you need to do:
Melt butter in a large pot over medium heat.
Add the onions and shallots to the melted butter and cook until soft (about 5minutes).
Add the potatoes, pumpkin, chicken broth, cumin, nutmeg, salt and pepper.
Reduce heat to low and simmer, covered until potatoes and pumpkin are soft (about 1 hour). Stir occasionally.
Remove the pot from the heat.
Remove the vegetables and a small amount of liquid from the pot and using a food processor, process until the puree is smooth.
Return the pureed vegetables to the pot and stir to completely incorporate the puree into the liquid.
Season to taste and serve.
Garnish with snipped chives.
