This quick and easy hors d'oeuvre is sure to please... after
all ... what's not to like? How can you
possibly go wrong with bacon and potatoes?
TIPS
You can find bags of small potatoes in the produce section
of the grocery store. I would stay away
from the red potatoes.. they tend to be softer and fall apart... instead ...
you can find small yellow potatoes.. they will work well.
Don't skip the "pre-cooking" step.... I've seen
recipes that wrap the raw potatoes with bacon.. problem is.. even the best
toothpicks tend to break when trying to push them into the potato. Just put two tablespoons of water in a
microwaveable dish... prick the potatoes with a small fork and place them in
the dish.. microwave on high for about 4-5 minutes.. that will make them soft enough
to easily push the toothpick in without breaking them.
Use regular bacon .. not thick sliced. Each potato takes about half a slice.
I serve this with a Sour Cream and Chive Horseradish Dip.

Recipe: Bacon Wrapped Potatoes
All you need:
Small yellow potatoes (*See TIPS)
Bacon
All you have to do:
Preheat the oven to 400 degrees F.
Put two tablespoons of water in a microwaveable dish...
prick the potatoes with a small fork and place them in the dish.. microwave on
high for about 4-5 minutes.
Wrap the bacon around the potato once (you will need to cut
the bacon slice in half) and secure it with a toothpick.
Place on a non-stick baking sheet or pan. Bake for about 20 minutes or until the bacon
is cooked but not crisp.
Remove to a serving tray and allow to cool to room
temperature or slightly warm.
Serve with Sour Cream and Chive Horseradish Dip.
