This little recipe for Spinach and Bacon Wontons… is quick,
easy and delicious… one of those last minute “noshes” or a quick add-on to a
party menu…
TIPS
I used frozen spinach… I usually have a bag of it in the
freezer for recipes like this… the recipe doesn’t use a lot so unless you have
other uses for an entire box of frozen spinach use the bagged variety.
I cooked the bacon and drained it on paper towels, then cut
it up into pieces. I placed the pieces in
my mini chopper with the shallot (also cut into pieces) to very finely chop the
bacon. A few pulses is all it takes.
I also used my mini chopper to mix the cream cheese and
spinach … just cut up the cream cheese into cubes and add the spinach… pulse
until well mixed. You can also use a
mixer if you don’t have a mini chopper.
You can jazz it up more with additions…. Italian seasoning,
garlic powder, onion powder…. All should work.. just a light sprinkling will be
fine.
You could also add a bit of shredded cheddar cheese… just
eyeball the amount… I’d say about a ¼ cup would work nicely. Be inventive!
The mixture should make about 24 wontons.

Recipe: Spinach and Bacon Wontons
All you need:
1 pkg. (8 oz.) cream cheese
½ cup frozen spinach, thawed and drained
1 shallot, minced
3 strips of bacon, cooked and finely chopped
Wonton wrappers
Olive oil cooking oil spray
All you need to do:
Preheat the oven to 350 degrees F.
Spray the muffin well in a regular size muffin tin with
olive oil cooking oil spray. Set aside.
Mix the cream cheese, spinach, bacon and shallot
together. I used my mini chopper. *See TIPS
Place a wonton in each muffin well… put about 1 ½ teaspoons
of the spinach bacon cream cheese mixture in the center of each wonton… fold
the ends up slightly. Give the tops a quick spray of the olive oil cooking oil spray.
Bake until lightly browned… about 10 minutes. Remove them from the tin and allow to cool to
warm… Place on a serving plate to serve.
