Quick ... easy... and delicious! A great little snack for
watching the game!
TIPS
I won't put quantities on the ingredient list... the amounts
will depend on how much you plan to make... you need just enough olive oil to
quickly drag your zucchini slices through it.. start out with about 3
tablespoons and add more as you need it..
Same goes for the Italian bread crumbs... start with about
1/2 cup... add as you need it. Mix
about 3 tablespoons of grated Parmesan cheese in with it (more if you like a
lot of cheese).
Cut the zucchini slices about 1/8 of an inch thick... leave
the skins on.
Keep an eye on them.. baking time will vary with the size
and thickness of the slices... if you use small zucchinis...and your slices are
about 1/8 inch thick and about the size of silver dollars (see my picture)...
mine took 23-25 minutes.
Serve them with pizza sauce.. a great little snack!
Recipe: Zucchini Chips
All you need:
2 small-medium zucchinis, sliced *See TIPS
Olive oil
Italian Bread crumbs
Parmesan cheese, grated *See TIPS
Olive oil cooking spray
Chopped fresh parsley or basil for garnish (optional)
All you have to do:
Preheat the oven to 450 degrees F. Line a baking sheet with non-stick foil. Spray the foil lightly with olive oil cooking
spray.
Put the olive oil in a flat bowl. Put the bread crumbs and Parmesan cheese in
another flat bowl. Drag the slices
through the oil then the bread crumb mixture.
Place on the foil lined baking sheet.
Bake for 20-25 minutes.
Keep an eye on them so they don't burn... thinner ones will cook faster.
Remove with a spatula and place on a serving plate with a
bowl of pizza sauce for dipping.
