A wonderful side dish to grilled meat.. this low carb side
dish is one sure to please... tossed with a little olive oil and butter and seasoned
with Italian herbs and garlic... makes for a delicious blend of flavors...
Best of all... minutes to prepare.... and just pop into the oven!
TIPS
Wash the summer squash .. leave the skin on and slice it
thickly... cut the bigger slices in quarters and the smaller ones in half.
I use a little melted butter ... I personally think it adds
a little more flavor... you can use all olive oil if you prefer.. just up the
quantity of the olive oil.
This recipe makes enough for two servings... just double or
quadruple the quantities if you need more.
For those on a low carb diet.. this is a perfect side dish..

Recipe: Italian Seasoned Summer Squash and Tomatoes
All you need:
1 medium summer squash, sliced then quartered *See TIPS
1 plum (Roma) tomato, sliced then cut in half
1 tablespoon butter, melted
1 tablespoon olive oil
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 (be generous) teaspoon garlic powder
1/2 teaspoon onion powder
All you need to do:
Preheat the oven to 400 degrees F.
Place the cut-up squash and tomato in a medium bowl. Mix the olive oil and melted butter and then
pour it over the vegetables. Toss to
evenly coat.
In a small custard cup or ramekin, mix the remaining
ingredients ... then sprinkle it over the vegetables.. toss to evenly coat. Pour the vegetables into a small baking dish
and bake at 400 degrees for 20 minutes.
Serve immediately.
