Skinny Cake?... whoever heard of such a thing?... and the
bigger question... where was I when this was introduced???? Who can resist a guiltless chocolate cake?...
I sure can't.
The best part? ... The cake has TWO ingredients... yes ..
that's right... TWO ingredients! The
"frosting" has TWO ingredients also!
Tell you more?... well... read on my friend..
TIPS
You can use any boxed cake mix.... don't fret... some are
just over 18 ounces.. others around 15 ounces.. both work.
The second ingredient... is diet soda... which honestly
shocked me.. I had read that it wasn't good to bake with diet sodas.. but... if
Weight Watchers.. and the Food Network say it's okay.. well.. I'm on board.
So which diet soda?... anyone you want. I used a diet Cherry Coke Zero.... honestly
there was only a hint of cherry in the cake... Warren says he couldn't taste it
at all... next time for this recipe I will use a plain diet Coke Zero. You could also try a diet 7-UP.
The cake doesn't rise as much as a normal cake mix would...
but is just as delicious.. moist and flavorful.
You can bake it in any pan you want.. just follow the time
and temp instructions on the cake mix box.
**Use the lowest time of the range listed on your cake box for your size
pan.
In the picture above.. I had baked a 9 x 13 pan.. and cut a
rectangle size piece... added layer of mocha Cool Whip.. then cut another piece
the same size and used that for the second layer. I wanted to make a dessert for just the two
of us... of course we liked it so much.. I ended up making more...
The "frosting" is only lite Cool Whip and
International Foods Suisse Cafe Mocha instant coffee. Use about 3 teaspoons per cup of Cool Whip..
or to taste.

Recipe: Skinny Chocolate Mocha Cake
All you need:
For the cake:
1 boxed cake mix
1 12 oz. can of soda *see TIPS
For the frosting:
Lite Cool Whip
International Foods Suisse Cafe Mocha instant coffee *See

All you need to do:
To make the cake:
Preheat the oven to the temperature listed on the box of
cake mix.
Spray a pan (any size that's listed on the box of cake mix)
with non-stick cooking spray.
In a bowl, mix the cake mix and the soda, use a large spoon
to stir until well mixed.. a tiny lump here and there isn't a problem, but you
want it mixed well.
spread into the prepared cake pan and bake according to the
directions on the cake box. Make sure to
use the lowest time in the time range for your size pan. Test the cake by inserting a toothpick into
the center of the cake.. if it comes out clean.. it's done!
Cool on a rack and remove from the pan as directed.
To make the "frosting":
