This super easy recipe for Doughnut Muffins is done in under
30 minutes... a delicious start to any day!
A yummy alternative to fried doughnuts... without the mess and grease.
This is not one of your "fussy" recipes... nope...
line up the ingredients.. follow the instructions.. adding the ingredients into
a mixer bowl.. and beat away! The
result is muffins that have a doughnut like texture... with the flavor of
cinnamon and sugar... yummmm!
The recipe is from the folks at King Arthur Flour... follow
it exactly and success is yours.. for sure!
TIPS
As I mentioned.. follow the recipe instructions exactly..
don't worry they're easy.
I did do one minor change.. or I should say addition... after
brushing the tops with melted butter.... I sprinkled them with Demerara
Sugar... it's the crunchy sugar you find on top of some commercially baked
goods. I wrote a post about it.. you can read it here.... the sugar isn't expensive and is readily available.. usually
by the sugar or baking goods in the grocery store. I found mine at Walmart.
I also cut the amount of nutmeg... the original amount was 1
to 1 1/4 teaspoons of nutmeg.
I make cinnamon sugar and store it in a jar... here is the recipe... or you can use a commercial blend.
Try these quick and easy muffins!
Recipe: Doughnut Muffins
All you need:
1/4 cup butter, softened
1/4 cup vegetable oil
1/2 cup sugar
1/3 cup brown sugar
2 eggs
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon nutmeg
3/4 teaspoon salt
2 2/3 cups King Arthur Flour
1 cup milk
For the Topping:
3 tablespoons butter, melted
About 3 tablespoons cinnamon sugar
Demerara Sugar
All you need to do:
Preheat the oven to 425 degrees F.
Spray a muffin tin with cooking oil spray.
In a mixing bowl, beat the butter, vegetable oil, sugar and
brown sugar until smooth.
Add the eggs and beat them in. Add the baking powder, baking soda, nutmeg, salt and
vanilla. Beat until mixed.
Add some flour and beat.. then add some milk and beat... continue
alternating adding the flour and milk until all the flour and milk have been
added.
Spoon into the prepared muffin tin. Divide evenly between 12 muffin wells. (The batter will be thick and it will mound a
bit.. they will be almost full).
Bake for 15-17 minutes (mine took 17 minutes)... test by
inserting a toothpick into the center of one of the center muffins.. if it
comes out clean and the tops a light golden.. they're done!
Allow to cool about 5 minutes.. then remove from the
pan. Brush melted butter on the tops and
sprinkle or dip into the Demerara sugar and then into the cinnamon sugar.
