Recipe: Mini Mexican Refried Bean and Cheese Snacks

These little Mexican Refried Bean and Cheese Snacks work perfectly as an appetizer or snacks for a get together… they can be assembled in advance and just popped in the oven… they take just 5 minutes to bake.

TIPS

Four inch rounds of flour tortilla work perfectly in a standard muffin tin… find something that size in your kitchen to use as a pattern to cut the rounds from larger tortillas… I used a glass custard cup for mine. If you can’t find anything, then make a pattern out of paper to use.

Make sure you spray your muffin tin lightly with olive oil cooking spray so the cups crisp up when baking.

Gently push the tortilla round into the muffin cup, taking care not to tear them. If you do have a small tear, it should be okay the ingredients should seal it when baking.

You can use either homemade or store bought refried beans… click here for my recipe for Refried Beans.

You can make different fillings and make an assortment, which is especially good for parties. Mini Mexican Cheesy Corn Snack Cups would go perfectly with these.

Garnish with sour cream.

Quantities have been left off… make as few or as many as you like.

Try these for your next party… they’re quick, easy and delicious!
