Recipe: Bacon Scallion Cream Cheese Spread

I started making this after we had it at our local bagel place. It provides a savory alternative to the other sweet cream cheese spreads when serving bagels. This also works well as a cheese spread you can put out with crackers as an hor’dourve.

I follow this exactly for a brunch spread… the onion flavor has a definite presence without being overwhelming. If I serve it as an hor’dourve spread… I add more scallion… I’d say about one scallion more.

As I’ve previously mentioned in time saving tips… the bacon is freshly made and chopped in the mini chopper and stored in the fridge or freezer for uses just like this.

I definitely recommend only using brick cream cheese, it needs the bulk to handle the other ingredients.

Bacon Scallion Cream Cheese Spread Recipe:

All you need:

1 brick (8 oz.) Philadelphia cream cheese
2 tablespoons finely chopped crispy bacon
¼ cup coarsely chopped scallions

All you need to do:

Finely chop the coarsely chopped scallions in a food processor.

Cut chunks of the cream cheese and drop them into the bowl of a processor, making sure you spread them out.

Sprinkle the bacon over the cream cheese and pulse the processor until well blended, scraping the sides of the processor bowl as needed.

Refrigerate overnight.
