Pollo (Chicken) Loco




This dish is a favorite of ours at our local Mexican restaurant.  We’ve had it in a number of places in our travels as well… all very similar… but this recipe is as close to a copy cat of our local place’s dish.
TIPS
This recipe is easy.. so easy.. you won’t believe it.  I use cheese dip (sauce) from our local supermarket (Publix).  I found it in the cheese section…. where they have shredded cheeses.  The brand is Gordo… we’ve used several others… you could make it from scratch but when I tell you it’s easier this way… it really is.
I used all three kinds of peppers, you can use any combination you like.. all three together make a great presentation and have subtly different flavors.
I used Portobello mushrooms… you can use plain mushrooms if you prefer…
The quantities are flexible… figure two thin sliced chicken breasts per person.  The recipe as written will serve 4.
Serve this with a Mexican rice and refried beans or a shredded salad.






Recipe:  Pollo (Chicken) Loco
All you need:
8 thin sliced chicken breast cutlets
2 tablespoons butter
2 tablespoons olive oil
1 red pepper, sliced
1 green pepper, sliced
1 yellow pepper, sliced
1 onion, cut in half then sliced
1 8 oz. pkg. Portobello mushrooms
1 container Gordo’s cheese dip
All you need to do:
In a large skillet, heat the butter and olive oil over medium high heat.  Sauté the chicken breasts until they are lightly browned and cooked through.  Drain on paper towels.  
In the same skillet cook the peppers and onions until they are almost soft.  Add the mushrooms and cook until the vegetables are soft.
While the vegetables are cooking, slice the cooked cutlets in thin strips.  Place them on a platter and keep them warm.
Scoop the cheese dip into a microwavable bowl and heat in the microwave.  The container has instructions.  Be careful not to cook it on too high a heat setting, depending on the power of your microwave.  Heat in 30 second intervals and then stir.  I heat mine at 70%.  I tried a higher setting and it browned the edges.
Arrange the chicken strips and some of the vegetables on a plate.  Spoon cheese dip (sauce) over all.   This is delicious with rice.  If serving rice allow the cheese to “pool” a little by the rice.
You can also serve this family style and allow each person to spoon their own sauce over it. 
Totally delicious and so easy to make!
