Recipe: Pea Salad
This simple …. yet delicious Pea Salad is a wonderful change from the ordinary salads … a great side dish to sandwiches and burgers .. yet special enough for a holiday meal too. With family reunions, graduations and barbeques coming up.. . add this recipe to your favorites.
Let’s face it… if you don’t sign up to bring the potato or macaroni salad fast enough… by the time you get the list… you sit there and wonder… now what?... this recipe is the perfect answer… it’s quick and easy and always a crowd pleaser.
TIPS
I always use frozen peas… I personally don’t care for canned peas … and frozen peas aren’t mushy like canned peas.
Try to make sure you get a smoked ham slice… rather than a plain ham slice.. the smokey flavor really adds to the salad. You could use bacon… but I really prefer the smoked ham.
I used Colby Jack shredded cheese.. you could easily substitute shredded cheddar if you like that better.
I used Hidden Valley Buttermilk Ranch dressing… but you could easily substitute another brand or flavor including lower fat alternatives.
The recipe uses ½ cup dressing… you may like more.. but start with ½ cup then let the salad set for 10 minutes.. stir well.. then add more if you like. Remember you can always add more… can’t take some off if you add too much.

Recipe: Pea Salad
All you need:
4 cups frozen peas, thawed
2 cups smoked ham, diced
4 tablespoons red onion, finely diced
1 cup shredded Colby Jack cheese
1 small jar (2 oz.) chopped pimentos
½ cup Hidden Valley Buttermilk Ranch dressing
All you need to do:
Mix all ingredients except the dressing in a large bowl.
Add the dressing and mix well.
Refrigerate about an hour before serving.
