Recipe: Potato Salad with Sweet Pickle Relish
If you have been to my blog regularly… you know… I love to try new ways to make salads…. not to say I like any of my other recipes any less… it’s just that I like different things… kind of like ice cream flavors… we all have favorites… emphasis on the “s” …favorites… more than one.
We like light suppers in the summer… and here in Georgia… we already have had hot and humid days… so sometimes we like sandwiches for supper… rather than serve the sandwich with chips… I made this salad with turkey club sandwiches…
TIPS
This recipe is similar to the others recipes I have posted except it has a little different flavor with the sweet pickle relish added… and if you like a little tang in your salad… you can use Miracle Whip Salad Dressing instead of the mayonnaise.
I hope you get in the habit of “changing things up” by trying different recipes… who knows… you just might have to add another one to your list of favorites.
Recipe: Potato Salad with Sweet Pickle Relish
All you need:
About 2 pounds of potatoes, peeled and cubed
2 celery stalks, finely diced
3 eggs, hopped
1 medium onion, finely chopped
For the Dressing:
¾ cup mayonnaise
3 tablespoons sweet pickle relish (or to taste)
1 teaspoon yellow mustard
Salt and pepper to taste
All you need to do:
Put the potatoes in a large pot and cover with water.
Bring to a boil, then immediately turn the heat down and simmer until potatoes are cooked (about 10-15 minutes)… check with a fork… they should be cooked but still firm.
Drain and rinse with cold water…. cool completely.
Place cooled potatoes in a large bowl.
Add the onions, egg, and celery…mix well.
In a small bowl mix the dressing ingredients.
Pour dressing over the potatoes and mix well.
Refrigerate at least 2 hours.

Potato salad made with relish is totally Southern. Everyone makes it that way in Eastern North Carolina.

Hi Judy!... I know... living here in the south.. people talk about using pickle relish in potato salad all the time... I had an old recipe I hadn't used in eons... so I thought I'd make it... my southern man was a happy camper
