Breaking Eggs into Small Dishes Before Using Them


Tip of the Day

I break my eggs into small custard cups or ramekins before adding them into other recipe ingredients. This way if I get a stray bad egg I don’t ruin all the ingredients I plan on using.

Thanks! It only takes once for a bad egg to ruin what you have planned to convert you to this little tip. The Barefoot contessa says this tip whenever she gets a chance... she must have had a bad egg once too.
