Making Breakfast Interesting

Tip of the Day:

One of the biggest challenges is taking the boredom out of breakfast, especially the weekday breakfast. Kids are running off to school… parents are just trying to get it all together … getting kids moving, making lunches, getting everybody out of the house on time… and getting the kids and the adults to eat something in the morning is a challenge. While cold and hot cereals are good… day after day … they can get boring.

Try to mix it up a bit. Bagels with a tasty spread make great on-the-go breakfasts. You can make your own spreads easily … either using your mixer or food processor. I’ve previously posted some terrific cream cheese spreads … Raspberry Spread and Honey and Walnut Spread…. see the label “Dips and Spreads” for those recipes.

When I make pancakes or french toast or waffles on the weekend… I try to make a few extra… then store the extras in an air tight container in the fridge… all you have to do is take what you need and microwave them… and in a minute you have a hot breakfast. I also think they're much better than the frozen commercial varieties.

My son’s favorites are banana or blueberry pancakes…. Try dividing your batter up and making a couple of different varieties… all you need to do is slice up a banana or throw in some blueberries….or both…. it takes virtually no extra time and you have something different all ready for during the week.

Breakfast burritos… kids love them… when I make breakfast on the weekend… I make sure to make up extra eggs with all the “fixin’s” (can you tell I live in the south?) and store them in … you guessed it… an airtight container in the fridge…. All you have to do is take out a portion for a tortilla… put it in a microwavable dish and pop it in the microwave to heat up…… then put it in a tortilla…sprinkle a little shredded cheese on top…fold or roll… and pop in the micro again for a minute to melt the cheese…

Trust me… your kids won’t complain about eating breakfast again!
