Heavy Cream vs. Whipping Cream

Different types of cream can be whipped, including “Whipping Cream” and “Heavy Cream”. Different recipes may specify Whipping Cream, while others may specify Heavy Cream. Some recipes don’t specify. So which type do you use? … and just what is the difference?

The difference lies in the butterfat content. Heavy Cream has a higher butterfat content (36-38%) than Whipping Cream (30%). Both creams can be whipped… however, heavy cream whips the best.

Heavy cream whips up a denser whipped cream and doubles in volume. The whipped cream will hold shape.
