Recipe: Southwest Topped Baked Potatoes

This is a great little recipe…. have left over salsa?.... red and green peppers left from a vegetable tray?... here’s a terrific way to use them up…. Another great recipe from Yoplait.

Southwest Topped Baked Potato Recipe

All you need:

4 medium baking potatoes
1 cup Yoplait Fat Free plain yogurt
¼ cup salsa
1 tablespoon chopped red pepper
1 tablespoon chopped green or yellow bell pepper
Sliced green onions.

All you need to do:

Preheat oven to 375 degrees.

Prick potatoes with a fork.

Bake 1 to 1 ¼ hours or until tender.

Cool Slightly.

Cut potatoes in quarters or in half lengthwise without cutting all the way through the bottoms.

Mix remaining ingredients in a small bowl.

Spoon the yogurt mixture over the potatoes.

Sprinkle with sliced green onion.

Makes 4 servings.
