Recipe: Creamy Potato Soup


This potato soup recipe is adapted from a few recipes… it’s just delicious!

A perfect compliment to a hearty sandwich.

This tastes like a cream soup without the fat and calories because you puree some of the potatoes instead of using butter and cream. I don’t puree all the potatoes so I have some of the texture of the potatoes still left in the soup.

You can lower the fat of this recipe even further by using lower fat cream cheese.

You won’t believe just how easy this soup is to make!

This soup is a definite family pleaser.

Creamy Potato Soup Recipe:

All you need:

4 cups low sodium fat free chicken broth
5 cups of potatoes, peeled and cubed
¼ cup finely chopped celery
¼ cup onion minced
½ teaspoon salt
¼ teaspoon ground fresh black pepper
¼ teaspoon cayenne
1 ½ package (8 oz. pkgs) cream cheese, softened
5 strips of bacon, cooked and crumbled
Shredded cheddar cheese
Fresh chives or chopped green onions

All you need to do:

Combine broth, potatoes, celery, onion, salt, black pepper, cayenne in a large pot.

Boil potatoes over medium heat until tender.

Remove ½ the potatoes with broth and blend in a blender until smooth.

Return potato mixture to the pot.

Reduce the heat to low.

Cut the cream cheese into chunks and add to the soup.

Stir the soup constantly until cheese fully melts.

Garnish with crumbled bacon, cheddar cheese and snipped chives or chopped scallions.
