Recipe: Cherry Muffins

This is another slightly different muffin…. the batters on these muffin recipes are very similar… what makes each unique is either the fruit used or additions into the batter… for this recipe you can use frozen cherries if you don’t have canned. Thaw them and drain them before using them.

Varieties and possibilities are limitless… all you have to do is experiment… start out by using different fruits… and move on from there… I’m sure your family will have no complaints from the taste testing department… and who knows… you may invent a new family recipe.

Cherry Muffin Recipe:

All you need:

1 cup canned cherries, drained
2 cups of flour
4 teaspoons baking powder
¾ cup sugar
1 teaspoon salt
2 eggs
1 stick butter, melted
1 cup milk
¼ cup sugar
¼ teaspoon cinnamon

All you have to do:

Preheat oven to 400 degrees.

Grease muffin tins generously.

In a small bowl combine ¼ cup sugar and cinnamon. Set aside.

Cut cherries in half.

Combine flour, baking powder, ¾ cup sugar and salt in a medium bowl.

Add the cherries to the flour mixture and toss lightly.

In a small bowl beat the eggs.

Add the milk and butter to the eggs, beat until well mixed.

Add the egg mixture to the flour mixture and mix lightly to blend the ingredients.

Batter will have small lumps.

Fill muffin cups ¾ full. Makes approximately 12 muffins.

Sprinkle sugar-cinnamon mixture over batter in muffin cups.

Bake for 15 minutes or until a toothpick inserted in the center comes out clean.
