Recipe: Applesauce Oatmeal Muffins

These applesauce oatmeal muffins are wonderful! I got the recipe a number of years ago from a friend….. every time I make them I remember why I begged for the recipe.

Recipe:  Applesauce Oatmeal Muffin

All you need:

1 stick of butter
¾ cup brown sugar, firmly packed
1 egg
1 cup flour
½ teaspoon cinnamon
1 teaspoon baking powder
¼ teaspoon baking soda
¼ teaspoon salt
¾ cup applesauce
½ cup raisins
1 cup quick rolled oats
½ cup chopped nuts

All you need to do:

Preheat oven to 350 degrees.

Combine in a small bowl the flour, cinnamon, baking powder, baking soda, salt. Set aside.

In a medium bowl, beat the butter, gradually add the brown sugar.

Add the egg and continue beating.

Beating slowly, add a portion of the dry ingredients then a portion of the applesauce, then the dry ingredients, then the applesauce… until both are completely incorporated.

Stir in the oatmeal, raisins and nuts, mixing well.

Spoon into well greased muffin cups (about 2/3 full). This makes 12 muffins.

Bake for 25-30 minutes or until a pick inserted in the center of a muffin comes out clean.

Cool on a rack.
