This recipe is from the folks at Eating Well… it tastes great and very easy to make.
TIPS
This sauce can be made ahead…. Just cover and refrigerate for up to 2 days. Reheat in a microwave on high for 1 to 1 ½ minutes, stirring once.
Hollandaise Sauce - Slimmed Down Recipe
All you need:
1 tablespoon butter
¾ cup non fat buttermilk, divided
1 tablespoon cornstarch
½ teaspoon salt
Pinch of cayenne pepper
1 large egg, lightly beaten
1 tablespoon lemon juice
All you need to do:
Melt the butter in a small saucepan over low heat, stirring until the butter turns golden (about 1 minute).
Pour the melted butter into a small bowl and set aside.
Whisk ¼ cup buttermilk, cornstarch, salt and cayenne in a medium saucepan until smooth.
Whisk into the medium saucepan the egg and the remaining ½ cup buttermilk.
Over medium-low heat, cook the sauce, whisking constantly, until it begins to simmer.
Cook and continue whisking for about 15 more seconds.
Remove from the heat and whisk in the lemon juice and the melted butter.
