Recipe: Dijon Rice Florentine
All you need:
1 can (14.5 oz) low sodium fat free chicken broth
1 clove garlic, minced
1 cup Minute White Rice, uncooked
1 pkg. (10 oz.) frozen chopped spinach, thawed and drained
1 tablespoon Dijon mustard
1 tablespoon grated Parmesan cheese
All you need to do:
In a medium sauce pan over high heat, bring broth and garlic to a boil.
Add rice and stir.
Reduce heat to low and cover.
Cook 10 minutes.
Press thawed spinach in a strainer to remove all liquid.
Add the spinach and the mustard to the saucepan and stir.
Cook 8 to 10 minutes or until liquid is absorbed and rice is cooked tender.
Stir in Parmesan cheese.
Makes 4 servings
