Recipe: Corn Dog Casserole

This is a great kid-friendly casserole … the family is sure to love. A friend gave me this recipe when my son was young… it was a pleasant change from the ordinary beans and franks. Serve this with oven baked fries or tater tots and you have a complete meal… and you put it together in a flash.







Recipe:  Corn Dog Casserole

All you need:

1 pkg (6.5 oz.) Jiffy Corn Muffin and Bread Mix
1/3 cup milk
2 tablespoons butter or margarine, melted
1 egg, beaten
1 can (28 oz.) baked beans
1 package hot dogs, cut into chunks
½ cup barbecue sauce
1 small onion, finely chopped

All you have to do:

Preheat oven to 375 degrees.

Combine baked beans, barbecue sauce, onion and hot dogs in a 2 qt casserole.

Bake in oven until mixture is bubbling.

In medium bowl, combine corn bread mix, milk, melted butter and egg with a few rapid strokes. Batter will have small lumps.

Spoon batter around rim of casserole leaving the center exposed.

Bake for 20-25 minutes or until topping is golden brown.
