Ranch Potato Salad


 
This great little potato salad recipe is yet another way you can make and enjoy potato salad... I love changing up classic recipes.. it keeps them from being boring and hum drum.
TIPS
You can use any type of potato you prefer using for potato salad... personally.. I like Yukon Gold or red potatoes.
Be sure to cut the potatoes into evenly sized cubes so they cook evenly.
Use any ranch dressing you like... homemade or store bought... but make sure you use one that has a strong flavor otherwise it will get lost in the salad.
I like thick sliced smoked bacon.. I love the smoky flavor... but again.. you can use any type you prefer.

I don't make really crispy bacon... I don't like the hard pieces in my salad... but make sure it is crisp.. just not like a twig.
Use both the white and green parts of the green onion.
I hope you try this spin on a classic salad ... it's great for a change of pace!






Recipe:  Ranch Potato Salad
All you need:
About 2 pounds of potatoes, peeled and cut into large dice
3 eggs, hard boiled, peeled, roughly chopped
5 strips of bacon, crisp and roughly chopped
1 large stalk celery, finely diced
2 green onions, chopped
3 tablespoons fresh parsley, chopped
1 1/2 cups ranch dressing
Salt and pepper to taste
All you need to do:
Put the diced potatoes in a large pot and cover with water.  Bring the water to a strong simmer and cook until tender but not mushy.  Drain and rinse with cold water.
Combine the potatoes in a large bowl with the remaining ingredients.  Cover and chill for about 4 hours or so in the fridge.
