Recipe: Quick and Easy Apricot Chicken


This recipe for Apricot Chicken is so quick and easy... I was skeptical... I saw this recipe so many places... and it never had a bad review ... but the ingredients seemed strange to me.. but then again.. nothing ventured nothing gained... so I tried it... and we liked it!
TIPS
The recipe calls for a bottle of Red Russian dressing.. don't substitute the pink stuff.... if you can't find Wishbone Russian Dressing (Red only!) ... you can use Catalina... but try and find the Wishbone Dressing.  I had never heard of it until Warren brought it home by accident... I had sent him with a list that included Russian Dressing.... and that's what he grabbed.
I used Polaner All Fruit for the apricot jam.. but you can use any apricot jam.
Honestly... there isn't much to the recipe... the only other tip I have is ... the sauce gets runny after cooking in the oven.. so stir it up before spooning it over the chicken on a serving plate.. it tends to be thicker toward the bottom of the baking dish.
This recipe will have enough sauce for up to 6 chicken breasts... I make the same amount of sauce for less chicken breasts.. it's tasty on rice!







Recipe:  Quick and Easy Apricot Chicken
All you need:
Boneless skinless chicken breasts (thick ones)
1 bottle (8 oz. Wishbone Russian (Red) Dressing
1 cup Polaner Apricot All Fruit
1 1/2 packets Lipton's Dry Onion Soup mix
All you need to do:
Preheat the oven to 350 degrees F.
Place the chicken breasts (up to 6) in a baking dish.
In a medium bowl mix the dressing, apricot fruit and onion soup mix.
Pour the mixture over the chicken and cover with foil.
Bake for one hour at 350 degrees F.
