Recipe: White Chocolate Chip Pancakes with Raspberry Syrup


This is for all of us white chocolate lovers… White Chocolate Chip Pancakes… drizzle a little raspberry syrup… okay maybe more than a drizzle… and a little shot of whipped cream… heaven!

Make these pancakes in a heart shape and you have yourself a wonderful little Valentine’s Day breakfast. ….

The recipe is easy and foolproof… one that anyone can make… yes that’s right… anyone... so the white chocolate lover can be indulged a little…

TIPS

As for the heart pancakes… they are super easy to make with a Nordic Ware Heart Pancake Griddle … you can find it at Target and other stores as well.

You can … of course make these pancakes as you would any other pancakes… and skip the heart shape.

I thought flipping the pancakes in the heart shape wells in the griddle would be difficult but it wasn’t, the entire surface is a griddle so the pancake will cook if you don’t flip it exactly into the heart shaped well again. If you miss… it will slide into the well if nudged with a spatula.

I used self rising flour… if you use all-purpose flour… add ½ teaspoon baking powder and up the quantity of baking powder to ¾ teaspoon.

If you don’t have buttermilk, you can make your own… mix 1 tablespoon distilled white vinegar into 1 cup of milk and let it stand 5-10 minutes…. that’s it.. honest!

I found the easiest way to evenly distribute the white chocolate chips in the batter is to scoop the batter onto the griddle and sprinkle the chips over each pancake rather than mixing them into the batter itself.

I used Smuckers Raspberry Syrup.

You can use any flavor syrup you like.. but raspberry just goes so perfectly with white chocolate.

Recipe: White Chocolate Chip Pancakes

All you need:

1 cup self-rising flour
½ teaspoon baking powder
1 teaspoon sugar
Pinch of salt
1 egg, beaten
1 cup buttermilk
1 tablespoon butter, melted
½ - 1 cup white chocolate chips
Butter flavor cooking oil spray
Raspberry Syrup
Whipped Cream for garnish

All you need to do:

In a large bowl mix the flour , baking powder, sugar and salt with a wire whisk.
Add the beaten egg, buttermilk and melted butter.

Mix until blended.

Spray the griddle with cooking spray and heat it over medium heat.

Scoop the batter onto the griddle and cook until the top of the pancake bubbles.

Turn the pancakes over and cook until light golden brown on the bottom.
