Recipe: Mexican Omelet
This recipe for a Mexican Omelet crossed my mind when I was sitting thinking about “family” foods for Cinco de Mayo instead of party foods…
I was trying to remember all the things I did when Erik (my son) was growing up… I tried to incorporate festive holidays in our meals… just to make things fun… and that’s how he learned all about Mexican Independence Day… and had fun learning it.
If the day fell on a weekend… I would make us Mexican Omelets…. They weren’t complicated… a few ingredients… but were they ever delicious…. So I just had to have one for lunch the other day… here is the recipe and the picture…
The recipe is for one omelet. For younger children or those with smaller appetites.. you can make this into a 2 egg omelet… just be sure to use a small pan.

Mexican Omelet Recipe
All you need:
3 eggs, beaten
3 slices of deli slices of pepper jack cheese
Salsa
Cheddar cheese, shredded
Sliced olives
Chopped green onion
Sour cream
Guacamole (optional)
All you need to do:
Spray a small omelet pan with cooking spray (butter flavor preferred).
Heat the pan over medium heat… add the eggs.
Use a larger pan to cover the omelet pan and cook until top of omelet is almost set.
Lay the cheese over the top. Cover again for a minute or unto cheese has melted slightly.
Slide the omelet onto a plate, flipping over the second half as you let it slide.
Garnish with salsa, shredded cheese, green onion, olives and sour cream. A dollop of guacamole is also a good topping.
That is what I call a perfect breakfast!
