Recipe: Aloha Pineapple Cream Cheese Stuffed French Toast


This recipe for Pineapple Cream Cheese Stuffed French Toast is yummy!.... No doubt about it… this will definitely be a winner with the lucky person you make this for.

As I pointed out in my Sunday Morning Breakfast Idea VII post… this recipe can easily be altered to use other fruits…. all I can say is we love it, no matter how it’s made. AND best of all… it’s so easy.

Quantities will depend upon how many people you are feeding. I always make up the entire cream cheese pineapple mixture…. whatever is left is great on English muffins, toast or bagels.

I figure 2 eggs and ¼ cup milk and a teaspoon of vanilla…. will soak about 3 stuffed French Toast “sandwiches”…. and I would make that for two people…. it never hurts to have a little extra… but 1 sandwich will probably be enough for each person… they are filling.

Brown Sugar Cinnamon is a mixture that is sold with the spices…. If you don’t have it… you can make your own…. it’s mostly brown sugar with a heavy handed dash or two of cinnamon.

Aloha Pineapple Cream Cheese Stuffed French Toast Recipe:

All you need:

1 (8 oz.) can of crushed pineapple
1 (8 oz.) package of Philadelphia Brand Cream Cheese
2 eggs, beaten
¼ cup milk (can use skim, 1%, 2% or whole)
1 teaspoon vanilla
6 slices Pepperidge Farm Brown Sugar Cinnamon Swirl Bread
1 teaspoon Brown Sugar Cinnamon
Butter Flavor Cooking Spray

All you need to do:

In a medium bowl, beat eggs, milk, vanilla and Brown Sugar Cinnamon.

In a small processor, cut up the cream cheese into small pieces. Add about 3 tablespoons of crushed pineapple to the cream cheese.

Pulse until thoroughly mixed. Do not add too much juice or the mixture will be too runny.

Put a large heaping spoonful of cream cheese in the middle of a slice of bread.

Spread it carefully taking care not to go as far as the edge…. to prevent leakage.
Place a slice of bread on top to make a “sandwich”.

Carefully place the sandwich into the egg mixture (1-2 minutes)…then flip over and let the top soak.

Spray a non-stick griddle with butter flavor cooking spray.

Heat the griddle to hot.

Place the sandwich on griddle and cook until bottom is golden…. flip the sandwich and cook until the bottom is golden.

Place on plate… cut in half on the diagonal…. Sprinkle with powdered sugar and serve.
