Tip of the Day:
When the cheesecake is removed from the oven, set it on a wire rack to cool.
To loosen the cake from the rim of the springform pan, use a thin metal spatula or a knife. Insert the spatula between the cheesecake and the rim of the pan and run the spatula around the edge to loosen the cake. Allow the cheesecake to cool completely before loosening the spring fastener and removing the ring.
When cake is completely cooled, release the spring fastener on the side of the pan. Lift the rim of the pan straight up to pull it gently away from the cheesecake.
