Recipe: Sausage Lasagna Skillet


This Sausage Lasagna Skillet is quick and easy to make.. and very adaptable to your personal tastes.
I don't know about you.. but my weeknights are busy... I'm always tight for time.. so cooking a good meal can be tough....  we make an effort not to eat out just for the sake of grabbing a meal.... oh, believe me we do... but staying healthy and watching a budget are important... so our attitude is... why spend money on a meal out that is only eh? .... or something we can make better at home. 
Skillet meals help fill in those gaps... quick to make.. and delicious... this dish is no exception.
TIPS
I used "hot" Italian bulk sausage.... the sausage from my local supermarket is not all that hot.... if you prefer something not quite as hot as the sausage available in your area.. simply use "sweet" or mild Italian sausage... or use half hot and half sweet.
My directions tell you to cook the sausage then drain it on paper towels.. wipe out the pan and add olive oil to sauté the onion and garlic... my sausage rendered very, very little grease... if yours is like that.. you can leave it in the pan and skip the olive oil... as your sausage looks like it's almost cooked, add the onions and garlic on top of the sausage... then periodically stir it so the onions will cook and become soft.
I chop the onion and garlic together in my mini processor... it's easy and gets them finely chopped and mixed together.
I like Hunts diced tomatoes... I like the way they're diced into small pieces... but feel free to use any other brand you prefer.  Likewise, I like to use Hunts Diced Tomatoes with Basil, Garlic and Oregano for this recipe... if you prefer another variety ... use it instead.
Do not drain the tomatoes.
I have tomato paste always in my cupboard or in the fridge... I use it to thicken skillet meals or soups or stews...  tomato paste also comes in varieties that add basil and oregano... feel free to use that ... it will simply add a little more robust flavors to your skillet.
This brings me to probably the best tip of all... make sure you keep a supply of canned tomatoes, and tomato paste in the cupboard... buy them when you see them on sale... they can be used in so many dishes... you will always have "something on hand" to make a delicious meal with.
The ingredients listed say 1 cup of dried pasta... I used a bit more because we like pasta... I don't measure... I add it by the handful... I used about 2 handfuls... which is about a cup and a half.
I used malfada pasta... cute little lasagna noodles.  They're hard to find... you can use any pasta shape you like... Rotini would work well too.
I made a small ricotta cheese mixture to drop on top .... after it heats we like it mixed slightly through the meat mixture... it truly makes it taste like a lasagna.... however... it looks a little... sloppy.. trust me... it's well worth it... totally delicious!
This recipe will serve 4- 6, depending on what else you serve with it.  (Leftovers re-read wonderfully too).
I serve this with a side salad and garlic bread.





Recipe:  Sausage Skillet Lasagna
All you need:
1 pound bulk Italian sausage (hot or sweet or a mixture of both)
1 tablespoon olive oil
1/2 medium onion, chopped *See TIPS
1 garlic clove, finely chopped *See TIPS
2 cans Hunts Diced Tomatoes with Basil, Garlic and Oregano
1 cup water
1 cup dried pasta *See TIPS
1/2 tablespoon Italian Seasoning
1/2 (15 oz) container part skim ricotta cheese
1/2 cup grated Parmesan cheese
Sprinkling of garlic powder
1 cup shredded mozzarella, divided
1 tablespoon tomato paste
All you have to do:
In a heavy skillet, cook the Italian sausage over medium high heat, breaking it into smaller pieces with a spatula as it cooks.
When the sausage is fully cooked, remove it to a paper towel lined plate.  Wipe out the skillet with paper towels, and add the olive oil to it.  Heat the skillet over medium high heat.  Add the onions and garlic and cook for about 2-3 minutes until the onions are soft, taking care not to let them burn... turn down the heat if necessary.
When onions are soft, add the sausage back into the skillet and stir to mix well.  Add the canned tomatoes, Italian seasoning, water, dried pasta.  Make sure the pasta is in the liquid, pressing down with the spatula. 
Add a little more water if necessary.  Bring to a boil over high heat, then reduce heat and simmer covered for about 10 minutes or until pasta is cooked.  Stir ocassionally.
Meanwhile, in a small bowl, combine the ricotta cheese, garlic powder, Parmesan cheese and 1/2 cup of the mozzarella cheese.  Set aside.
When the pasta is cooked, add the tomato paste to the skillet and stir well, simmer for about 5 minutes or until thickened.
Drop the ricotta mixture by small spoonfuls over the skillet mixture.  Sprinkle remaining mozzarella cheese over the top.  Cover and cook for about 5-7 minutes or until cheese is melted.
Optional:  Using a spoon, slightly mix the cheese mixture through the meat mixture.
Serve immediately.

Recipe: Mini BLT Bites


These adorable Mini BLTs will surely disappear in no time... they're perfect for an hors'dourves tray... who can resist bacon??
They're also great stacked on a skewer... along side a warm bowl of soup... a perfect light supper.
TIPS
I cut the crusts off.... it makes it easier to handle and looks the best.
Roma (aka Plum) tomatoes work best.
Leaf lettuce or butter lettuces are best.. actually butter lettuce is really the best.. it's softer and easier to layer on the tiny sandwich.
I highly recommend thick bacon... it will be less crisp and easier to push a tooth pick through... cook it until it's cooked but still a little pliable.  Drain on paper towels.

Recipe:  Mini BLT Bites
All you need:
Thick cut smoked bacon, cooked
Soft green lettuce
Mayo
White bread, lightly toasted
Plum tomatoes, sliced
Toothpicks or wooden skewers
All you need to do:
Cut the crusts off the bread (as close to the crust as possible).
Spread mayo on one side of the bread.
Cut the bread into quarters... then layer lettuce tomato and a small piece if bacon on a quarter.  Place another quarter on top (mayo side down and secure it by pushing a toothpick through it.

Oscar Night Party Ideas


Tonight's the night!  Oscar 2013... a fun evening to have some friends over to watch the awards.

Didn't plan haead for a party for Oscar Night?  It's not too late to put together a great little party.

How about a nice little gathering with bite sized appetizers… depending on where you live will affect what you might want to serve…. for those on the east coast in the US… Oscars come late in the evening… so bite-sized hors’dourves might just be the ticket.

You might also want to end the evening with a small tray of sweets too…. a little something to serve with tea or coffee….

TIPS

When planning a menu keep in mind the “do-ahead” factor….. preparing ahead is key… after all.. you don’t want to be slaving in the kitchen missing all the fun.



Consider completing preparing ahead your selection of appetizers and simply saving the baking step for last.

Consider oven temperatures and baking times when choosing which appetizers to make.

Quantities will depend on a number of factors… things to think about… time the party starts… number of people and of course budget.

If you’re starting late… then I figure they’ve already eaten something before coming ….even if it was light….. and this will be considered extra munchies for them….


I like to serve a variety of about 6 different kinds of appetizers…. figure about 6 pieces per person….



I also make sure to have a vegetable or fruit tray with dips…. and one chip and dip item… one or two small choices of sweets to end the evening.




If the festivities are starting a bit earlier… then one of the appetizer/hors’dourves will be substantial…. such as Stromboli or Ham and Cheese Puff Pastry Squares…. or Sweet and Spicy Cocktail Meatballs.



For a very late starting party…. I would consider a very light munch…. a cheese tray perhaps with wine…. and coffee and tea with an assortment of 2-3 small desserts or baked items….

I just posted this today… they’re quick and easy and can be made completely ahead… and won’t break the bank… don’t like Ham and Swiss? … make any combinations of meats and cheeses you want…. salami and provolone… turkey and pepper jack cheese….you can even make tuna melts… just make the tuna salad and use whatever cheese you want … be creative!

Recipe: Blueberry Cornbread


This quick and easy recipe for Blueberry Cornbread is the best you will ever eat..... honest!

Did you know most "blueberry" mixes don't contain actual blueberries??  Now why would you make them when you can make this recipe and know that you have wonderful lucious real blueberries in it.

This looks great and tastes great... perfect for breakfast... I make it on the weekend or at the beginning of a week.. so I have a quick breakfast weekdays.... sooo yummy!

Having guests?.... maybe a brunch get-together?... this is a perfect recipe for any occasion... a no-fail delicious accompaniment to any breakfast.

This recipe is a version of my Sweet Cornbread recipe.... it's is light and airy and moist… the cranberries add a little tartness to the sweetness of the corn bread.. a winning combination!.... oh and did I mention how easy it is to make?

Here’s the easy part.. it uses a cake mix and two Jiffy Corn Muffin mixes… yep.. it’s that easy… just a little tweak of the other ingredients and you have a wonderfully Sweet Cornbread... now add cranberries ... and well.. it's over the top with flavor!



TIPS

First let’s talk about the size.. this makes a 9 x 13 pan of cornbread….about double the size of most cornbreads… notta a problem.. for sure… it will disappear.. trust me.

I use milk… fat free (skim milk) instead of the water in the recipe… my Butter Recipe cake mix box lists 2/3 of a cup water and each of the Jiffy Corn Muffin mixes list 1/3 of a cup milk… but that is really too much liquid altogether… 1 cup is enough.

If you substitute a yellow cake mix…I recommend that you  still use the 1 cup of milk… and use the fat free milk because it has a consistency closer to water than the other milks.

I found it mixes best if you mix the Butter Recipe Cake mix and the soften butter and eggs first… using a hand mix on low… add the milk.. beat with the hand mixer…. Then add the Jiffy Cornbread mixes and mix with a spoon by hand.. if you just add everything as some other recipes tell you… you end up with small (and some large) butter clumps… which are a pain to disperse… and you end up over mixing the cornbread mix.

In a small bowl, toss the blueberries in about 1-2 tablespoons flour... just enough to coat them... this will help keep them all from sinking to the bottom... some will still sink but most will stay throughout the bread.

Baking times vary… I used 9 x 13 baking dish… I baked it a total of 45 minutes… which is about 5 minutes longer than my plain cornbread... I imagine the blueberries added a bit of moisture as they baked....

I baked my cornbread for 45 minutes…. How long you bake yours will depend on your oven... start testing it after 40 minutes.   You want a toothpick coming out clean and no jiggle in the center…

If the top starts to brown too much (it shouldn’t)… just lay a piece of foil on top.. just lay it loosely… and you should be fine.

Try this delicious and easy cornbread.... it's delicious!






Recipe:  Blueberry Cornbread

All you need:

1 (18.25 oz) Duncan Hines Moist Deluxe Butter Golden cake mix
1 stick ( ½ cup) butter, softened
5 eggs
1 cup Fat Free Milk
2 boxes Jiffy Corn Muffin mix
1 pint fresh blueberries
1-2 tablespoons flour

All you need to do:

Preheat the oven to 350 degrees F.

Spray a 9 x 13 baking dish with butter flavored cooking spray or grease with shortening.

In a very large bowl, mix the cake mix eggs and butter. Using a hand mixer, mix for about 30 seconds or until well distributed. Add the milk and continue mixing for about 4 minutes at medium speed.

Add the Jiffy Corn Muffin mixes and mix with a spoon by hand until blended.

In a small bowl, toss the blueberries in flour to coat them.  Fold them into the batter until evenly distributed. 

Pour batter into the prepared baking dish.

Bake for 45 minutes or until a toothpick comes out clean AND the center does not jiggle.

Cool for 10 minutes… serve warm or at room temperature.

Recipe: Mini Bacon and Cheese BBQ Meatloaves


Mini Meatloaves are an ingenious way of making meatloaf in half the time.... a time-saver that's perfect for weeknight meals... and a terrific way to try out new flavors to add into meatloaf... gone are the days of boring meatloaf... make it interesting and you'll see plates empty quickly!
Mini loaves are perfect for serving a crowd... perfect individual servings and easy to make and serve!
TIPS
Use whatever BBQ sauce you prefer... or use my recipe... make BBQ sauce ahead of time and keep it in the fridge for wonderful recipes likes this... click here for the recipe.
Want to cut the fat and not the flavor?.. try using turkey bacon.
I used cheddar cheese in this recipe.. I highly recommend you use sharp cheddar so the flavor comes through with all the other flavors.
The BBQ sauce quantity is approximate.. I put 1/4 cup into the meatloaf mix.. and then I generously baste the loaves.  I also serve some BBQ sauce on the side as well.
I listed the Worcestershire sauce as 1/2 tablespoon... use your tablespoon measuring spoon and "eyeball it".
An easy way to evenly divide the meat into 4 servings.... make the mixture.. then shape it into a square ... cut into squares.. then reshape each quarter into a mini loaf.... easy!
Serve this with Four Cheese Mashed Potatoes and Southern Creamed Corn.... yummmm!





Recipe: Mini Bacon and Cheese BBQ Meatloaves
All you need:
1 pound lean ground beef
1/2 medium onion, finely chopped
1 clove garlic, finely chopped
1/4 cup chopped red pepper
1 egg, beaten
1 cup plain bread crumbs
1 teaspoon cumin
1/2 tablespoon Worcestershire sauce
1 tablespoon yellow mustard
1 cup shredded sharp cheddar cheese
Sprinkling of salt and pepper
BBQ  sauce * for quantity  - see TIPS
2 strips smoked bacon, cut in quarters
All you have to do:
Preheat the oven to 375 degrees F.
Line a baking pan with non-stick foil.
In a large bowl combine 1/4 cup BBQ sauce and all other ingredients except for the bacon strips.  Shape into mini loaves and place them on the prepared pan.  Brush them with BBQ sauce.

Lay 2 cut pieces of bacon on each loaf.  Brush them again liberally with BBQ sauce (I brush them before and after I lay the bacon on them).
Bake for about 30-35 minutes or fully cooked in the center (use an instant read meat thermometer if you are unsure or cut one open). 
Serve with additional BBQ sauce.

Recipe: Crock Pot Chicken Enchilada Soup


This crock pot soup is chock full of flavor... healthy protein and fiber.... and very low fat... now how often can you find an easy recipe... oh?... did I mention how easy it is to make?... I didn't?... well, let me tell you... it takes minutes to prepare... in fact.. you don't even need to defrost the meat... that's right... it's best not to defrost the meat... it makes it all the more tender.
So ... after that epic run-on sentence... let's get down to business..
TIPS
No sautéing is necessary.. you don't need the additional fat.. and everything tastes spectacular when it's done.. so don't be tempted to do it.
As I mentioned earlier... you don't need to defrost the meat... plop it in frozen... it will slow cook all day to a very tender meat that is easily shredded with a fork.
I also added the corn frozen... it will cook just fine in the crock pot... didn't get mushy either.
As for the heat... I used Rotel Mild Diced Tomatoes and Green Chilies.. they have a bit of snap to them.. nothing to worry about.. they make a hotter variety if you prefer more heat.
If you can't find Rotel Tomatoes or you prefer to use Hunts or another brand.. other brands cans of tomatoes usually are 14.5 oz... just use 2 of them... it will be fine... the taste will be fine.. I wouldn't adjust any of the other ingredient quantities... it just probably will add another serving... which shouldn't be a problem.
Likewise... if you prefer using tomatoes that are "with garlic and onion".. or green pepper... still keep the ingredients the same.. it will just add to the flavor .. in a good way!
Use cayenne sparingly.. you can always add more... if you aren't a spicy food person.. leave it out or use the smallest amount.. let it cook and add more later if you want more heat.
I make my own enchilada sauce... it is very very easy and quick to do... I'd say no more than 10 minutes.. tops... and that is being generous.. and well worth it... but if you want, you can use a commercial enchilada sauce... to get my recipe.. click here.
I served this as a meal in itself or sometimes I serve it with some cheese quesadilas.. and ... the leftovers are great... just a quick re-heat.. and you have a great meal.
This recipe will serve 6-8 depending on if you are serving anything with it.






Recipe:  Crock Pot Chicken Enchilada Soup
All you need:
1 large onion, diced
3 garlic cloves, finely chopped
2 cans (10 oz.) Rotel Mild Diced Tomatoes and Green Chilies
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
Pinch of cayenne
2 - 3(about 1 pound) frozen boneless skinless chicken breasts
2 cans low sodium black beans, rinsed
1 cup frozen corn
2 cups chicken broth
Shredded cheddar cheese (garnish) optional
Chopped green onion (garnish) optional
All you need to do:
Place all ingredients (except shredded cheddar cheese and chopped green onion) in a crock pot.

Cook on LOW for 6-7 hours (it won't hurt it to cook a bit longer if you're at work) .... take the meat out and shred it.. put it back and continue cooking for 30 minutes - an hour before serving.
Serve in bowls and garnish with shredded cheddar cheese and chopped green onion.

Recipe: Arrabbiata Sauce


Arrabbiata Sauce is a spicy tomato sauce is not only quick to make.. it's easy!   What is especially nice about making this instead of eating it out.. is that you control the heat... some people like it hot.. some people not so much.. make it how you like it.
This wonderful sauce is low fat... only a little olive oil in it... now how can you beat that?
TIPS
This recipe is not all that spicy.. but if you're one of those that aren't into heat... start with only 1/2 teaspoon of crushed pepper flakes... let it simmer for about 20 - 30 minutes.. then taste it... if you want it spicier .. add more.
I used Hunts diced tomatoes.. they have a "Spicy Pepper" variety.. that isn't hot at all.. but wonderfully flavored... try it!
Do not drain the canned tomatoes.
Let's say for argument sake..  you taste the sauce and it has too much heat for your tastes.. what can you do?.... you could add more tomatoes and make a larger amount of sauce.. or make it creamy by adding some non-fat half and half... or for those of you not opposed to adding fat into it.. heavy cream.
I used my mini chopper to chop the onions and garlic (together).
I like my sauce with some texture... we're chunky sauce people.. if you're not.. you could use an immersion blender to smooth out the sauce to your liking.
This recipe will serve 6.





Recipe:  Arrabbiata Sauce
All you need:
1 tablespoon olive oil
1 large onion, diced
3 garlic cloves, finely diced
2 cans (14.5 oz) Hunts Diced Tomatoes (Spicy Pepper)
1/2 cup dry red wine (optional)
1 tablespoon sugar
1 teaspoon dried basil
2 teaspoons Italian seasoning
1/2 - 1 teaspoon crushed red pepper flakes (see TIPS)
1/2 can (small) tomato paste
Sprinkling salt and pepper
All you have to do:
Add the olive oil to a large pot and heat it over medium high heat.
Add the garlic and onions and stir well to coat all the onions with the oil.  Cook for about 3-4 minutes until soft (do not allow to brown.. turn down the heat a bit if necessary).
Add the remaining ingredients and stir well.  Bring to a boil and then turn down the heat and simmer for 20 -30 minutes, stirring occasionally.
Serve over pasta.
