Recipe: Black Bean and Rice Burritos


This recipe for Black Bean and Rice Burritos uses Spanish Rice as its main ingredient… this quick and easy recipe is a supper time favorite… all the fresh flavors… wrapped in a tortilla…. so satisfying and so good.

TIPS

You can use my recipe for Spanish Rice or you can make your own… either way.. you can make this ahead of time and refrigerate it... heat it when you start to make supper. You can get it all put together in under 30 minutes… now how cool is that?

I used 1 cup of fresh salsa… you can find fresh salsa in the produce section in the supermarket.. it really is so much better than using bottled salsa.

You can add chicken to this dish… leftover chicken, rotisserie chicken or cook two boneless chicken breasts…

If you decide to cook the breasts…

Spray a skillet with olive oil cooking spray…heat over medium high heat… add the chicken and sear both sides… add one envelope of taco seasoning or my taco seasoning recipe to 1 cup of water … add it to the chicken and put a lid on the pan… lower heat to simmer and cook 5 minutes, turn them over and cook until they are no longer pink in the middle… about another 6-7 minutes.

Remove the chicken and cut into very small pieces or shred… add it back to the pan and add the rice mixture to it… mixing the taco sauce (from cooking the chicken in the pan)thoroughly with the rice… heat through.

Recipe: Black Bean and Rice Burritos

All you need:

Spanish rice (my recipe or yours)
1 can of black beans, drained and rinsed
1 cup frozen corn, cooked
1 cup fresh salsa
½ red pepper, diced
½ green pepper, diced
3-4 green onions, chopped (green and white parts)
¼ cup chopped cilantro
Shredded cheddar cheese (optional)
Sliced black olives (optional)
Sour cream (optional)
Tortillas

All you need to do:

In a large skillet mix together the Spanish Rice, black beans, corn, green pepper, red pepper and salsa.

Heat over medium heat.

When hot, remove from the heat and add the green onions and sprinkle with cilantro, mix well.

Serve with tortillas and shredded cheese, sliced black olives and sour cream(if desired).
