Recipe: Fried Cabbage with Bacon and Onions


This Fried Cabbage dish is a staple in a lot of German and Irish homes…. and with good reason… it’s absolutely delicious…. and very easy to make… let’s face it… how can you go wrong with bacon and onions?

Serve this with baked ham slices or Polish sausage and potatoes… and you have yourself a really tasty and quick meal.

TIPS

This recipe is a substantial side dish for about four servings…. if you think they’ll want seconds… you really should double the recipe.

I wrote the recipe with the cider vinegar as 1-2 tablespoons of cider vinegar… start with one and taste it… if you like it tangy.. add more…




Cut the head of cabbage in half, then lay cut side down and cut into slices.



Don’t salt this dish without tasting it first… the bacon adds quite a bit of salt.

Recipe: Fried Cabbage with Bacon and Onions

All you need:

½ head of a small cabbage, cut in wedges then sliced (about 5 cups)
5 slices thick sliced smoked bacon, chopped
1 medium onion, finely chopped
1-2 tablespoons cider vinegar (to taste)
Salt and pepper to taste

All you need to do:



In a large skillet over medium high heat, cook the chopped bacon until fairly crispy.

Remove the bacon from the pan.

Remove most of the bacon grease (leave about a tablespoon of bacon grease) and reserve the grease in a small bowl.

Lower the heat to medium and add the onions. Cook until the onions are translucent.



Add the cabbage and stir.

Drizzle about ½ - 1 tablespoon of the reserved bacon grease over the cabbage and stir well.

Cook until the cabbage is soft (about 20 minutes).



Add the bacon back into the pan and mix well.

Continue cooking for a few minutes.

Remove the pan from the heat and add the cider vinegar. Stir well.

Add salt and pepper to taste.

Yes, I can testify this cabbage is divine, and almost a weekly staple in our German-Ukranian home. DFIL positively swoons when he's invited for this meal:) This week we'll have our cabbage with corned beef brisket, carrots and of course pierogis, mmmmmm, can't wait:)
