Recipe: Home Fries


Home fries are a staple in diners …. especially in the Northeast. This recipe for Home Fries is the way I’ve made them for as long as I can remember…. starting with my Mom. Where hash browns are shredded potatoes… I was taught the little cubes of potatoes are Home Fries.

TIPS

I’ve seen lots of recipes for Home Fries around… but surprisingly I found none that season them with paprika…. I use sweet Hungarian paprika, but regular paprika is fine too. I also like to give them a tiny kick … I also sprinkle them with Hot Hungarian paprika…. cayenne will work too… just be careful not to use too much.

You can use frozen potatoes already cubed…. but really… it’s very easy to cut fresh potatoes… it takes only about 5 minutes…. and it’s so much cheaper.

The quantities below are for 3-4 servings.

This side dish is a terrific addition to a weekend breakfast…. I hope you try making them.

Recipe: Home Fries

All you need:

3 large potatoes, peeled and diced
½ medium onion, finely diced
1 tablespoon olive oil
1 tablespoon butter
Salt to taste
Pepper to taste
Paprika

All you need to do:

In a large skillet, over medium heat, melt butter with olive oil.

Add the potatoes.

Sprinkle salt and pepper over the potatoes and toss in the pan.

Cover and cook for about 10 minutes… make sure the potatoes don’t start to brown… if they do… turn down the heat a bit.

Add the onions, stir well.

Cook until onions and potatoes are starting to brown.

Turn up the heat to medium and high and cook until potatoes are golden brown and crisp… do not let onions burn.

Remove the skillet from the heat.

Sprinkle paprika over the potatoes and toss with a spatula to evenly coat.

Salt and pepper to taste.

I always use paprika for home fries. I love paprika, but then I am Hungarian.
